Serves 4
Cut the top off the pineapple and remove the flesh.
Use some of the flesh and set aside the rest for a salad or dessert.
Whizz all the liquid ingredients in a blender with the coconut flakes and a little crushed ice for 30-40 seconds.
When smooth and frothy, pour into the pineapple shell, decorate with cherries and pineapple leaves, and serve.
