Raspberry Lemonade

Instructions

Cut the ends off the lemons, then scoop out and chop the flesh.

Put the lemon flesh in a blender with the sugar, raspberries, vanilla extract and 4 - 6 cracked ice cubes and blend for 2 - 3 minutes.

Half fill four highball glasses with cracked ice and strain in the blended mixture.

Top up with sparkling water and decorate with the mint sprigs.
